La Manuela was born from a passion for Oaxaca: its culture, its people, and its agaves. From the heart of the mountains to your glass, our story is a blend of tradition, craft, and love for the authentic.

VISION

To be a mezcal brand recognized nationally and internationally for its commitment to tradition, quality, and Oaxacan identity, bringing artisanal mezcal to new generations without losing its essence or its origin.

MISSION

To produce high-quality artisanal mezcal, respecting the traditional processes of Oaxaca and honoring the work of the land, in order to offer distillates with character, identity, and authenticity, meant to be shared and enjoyed with respect.

OUR ARTISANAL PROCESS

Everything begins in the fields of Oaxaca, where we select mature agaves at their optimal stage. The piñas are slowly cooked to naturally develop their sugars and aromas. Afterwards, the agave is milled and naturally fermented, without accelerators or industrial processes.

The distillation is carried out with absolute attention to detail, guided by the experience of the master mezcalero, who determines each cut to preserve the sensory profile of the agave. We respect every stage of the process, allowing the mezcal to express its origin, its land, and its history.

PRODUCTION

1. Agave Selection

From the fields, we select mature agaves at their ideal stage of maturity, ensuring flavor, aroma, and quality. We respect the plant’s natural growth cycle.

2. Artisanal Cooking

The agave is slowly cooked in stone ovens, preserving its natural sugars, aromas, and ancestral nuances.

3. Traditional Milling

After cooking, the agave is crushed with a stone mallet, a traditional method that respects the agave’s original essence.

4. Careful Fermentation

We ferment with natural yeasts in clay or wooden vats, allowing the process to follow its natural timing, without rush or shortcuts.

5. Artisanal Distillation

We distill in traditional copper or clay stills, carefully attending to every detail to preserve aroma and body.

6. Filtration and Resting

Finally, the mezcal rests and is carefully filtered, ready to be bottled. This ensures clarity, purity, and authentic flavor.

7. Bottling & Design

Each bottle of La Manuela Mezcal reaches you with its original label, carefully crafted to reflect its presentation, identity, and an authentic style that invites celebration.
