Born as a family project, La Manuela is the fruit of generations that know the value of agave, the patience of the master mezcalero, and respect for the land. Today, that legacy is transformed into a contemporary proposal with an ancestral soul.
From the field, we select ripe agaves at their ideal maturity, guaranteeing flavor, aroma, and quality. We rigorously respect the natural growth cycles of the plant.
The agave is slowly cooked in traditional underground stone ovens, preserving its natural sugars, smoky aromas, and delicious ancestral nuances.
After cooking, the agave is milled using a stone wheel (tahona), a traditional method that respects the original essence of the agave and extracts all its juices.
We ferment with wild yeasts in oak wood or clay vats, allowing the process its natural biological time, without artificial haste or shortcuts.
We distill in traditional copper or clay stills, carefully monitoring every stage to preserve the pure aromas and characteristic body of the distillate.
Finally, the mezcal rests and is carefully filtered to remove any unwanted residue, guaranteeing crystal clarity, purity, and an authentic taste on the palate.
