Mezcal Sour Coctel

Mezcal Sour

Elegance made into foam. A silky and balanced touch of egg white and agave syrup that envelops the characteristic power of Mezcal La Manuela.

Ingredients:

  • 2 oz La Manuela Espadín
  • 1 oz fresh lemon juice
  • 3/4 oz Agave Syrup
  • 1 Egg White
Garnish: Angostura bitters drops and lemon twist

Preparation:

  1. Add the mezcal, lemon juice, agave syrup, and egg white to a shaker without ice (dry shake) and shake vigorously for 10 seconds to emulsify.
  2. Add plenty of ice to the shaker and shake hard again for another 12-15 seconds until well chilled.
  3. Double strain into a pre-chilled Old Fashioned glass or Coupe glass.
  4. Garnish with a few drops of Angostura bitters on the foam and add a lemon twist.
